Cashew Cream Recipe
1 cup soaked cashews
¾ cup water
1 tablespoon lemon juice
Soak the cashews in water overnight to soften them. The next day, rinse the cashews under cold water and add them to a blender with the water and the lemon juice. Blend on high for around one minute of until smooth.
Feel free to use this cream right away, or store it in the fridge for around 30 minutes to allow it to firm up. You can use this magical cream with granola, on top of chia pudding, or if you add in a little more lemon, as a sour cream.
